They are both great weapons. I've had the Gun Hammer before, but I would get the Iron Striker first. It's got high damage and abit of blue sharpness which increases the overall raw damage by 20%. Considering you can get a decent Fire Hammer early on in the game, you can get Gun Hammer later on.
Clarification Request:: Depends, where are you in the game- offline online, high rank low rank. And what you are looking for i.e. raw power, elemental, status attk. There is no best hammer its like trying to ask what is the best weapon in the game.
